PINEAPPLE AND NOODLE SALAD

This is a very easy salad to prepare. It also has all the flavours of Thailand without the trouble of searching for the exotic fruit types, as pineapple is readily available.
If you are a vegetarian you can replace the fish sauce with 1 tablespoon of soy sauce.
 

INGREDIENTS

(Serves 6)
Prep time 12-15 minutes
Dressing
Juice of 3-4 limes
2 tablespoons fish sauce
2 tablespoons sugar
1 garlic clove crushed
250g fresh pineapple cubed
450g rice noodles soaked in hot water and drained
1 inch piece fresh ginger
2 small red birds eye chilli
1 large red pepper seeded
Handful coriander leaves
4 spring onions
A bowl of food with some leaves on the side

INSTRUCTIONS

Start by making the dressing. Just mix all the ingredients together and set aside.
In a very large bowl add the pineapple and the rice noodles and mix. Now chop the chilli very very finely along with the red pepper that also needs to be chopped finely and add to the bowl. Chop the ginger as small as you can and roughly chop the coriander, chop the spring onion and mix really well.
Finally add the dressing and serve.
